The 6-Step Traditional Bilona Journey
We don’t believe in shortcuts. Every jar follows a time-honoured sequence:
Boiling the Milk: Fresh, pure cow milk is boiled slowly to ensure purity.
Setting the Curd: The milk is cooled and a small amount of Yogurt (natural starter) is added to ferment into nutrient-rich curd.
The Bilona Churn: The curd is churned using a traditional stirrer (Bilona) to separate the butter.
Collecting the Makhan: The freshly churned butter is washed and carefully gathered.
Slow-Fire Clarification: The butter is melted over a gentle flame, allowing moisture to evaporate and milk solids to caramelize.
Hand-Straining: The golden liquid is strained and naturally cooled to develop the prized granular texture.
